What is Gin?

Martinis. Tom Collins. Gin & Tonic. Classic gin cocktails are always refreshing and enjoyable. But what exactly is gin? What is gin made from and how is it distilled? We break down all the details you need to know about gin.

What is Gin Made From?

The legal definition of gin is an alcoholic beverage of no less than 37.5% ABV that possesses a predominant flavor of juniper berries.

Gin must be made from a base of grain, such as barley or wheat, which is then fermented and distilled. If this process sounds similar to other spirits, like whiskey or vodka, you’re right! But gin has a unique ingredient that is only found in gin: Juniper.

Juniper berries are required in the making of gin. In fact, if there is no juniper, the spirit cannot legally be called gin. But there are typically other botanicals added to the spirit during the process, such as herbs, seeds, flowers, plants, or spices. It’s these aromatics that provide each gin with its distinct flavor profile.

Types of Gin

Although there are many new types of gin coming from distilleries around the world, currently there are four main types of gin on the market, each with its own flavor and taste:

London Dry Gin

The most traditional gin and the one most people think of when they order a gin and tonic or martini, the London Dry gin originated in (you guessed it!) England. London Dry gin focuses primarily on the juniper flavor, without adding any artificial flavors or botanicals after distillation.

Plymouth Gin

Plymouth gin tends to be a brighter gin, focusing on citrus flavors in addition to the juniper. However, currently only Plymouth, Coates & Co. is allowed to produce Plymouth Gin.

Old Tom Gin

Named after master distiller Thomas Chamberlain, Old Tom Gin originated from the 18th century, when the distillation process was still new. Due to the primitive, and often dangerous distillation methods in those days, distillers would add simple syrup or licorice to sweeten the gin and make it more drinkable. While most gins today are drier, Old Tom Gin keeps it sweet with additional aromatics or sweeteners.

Genever Gin

Genever gin comes from the 16th century in Europe and is made from malt wine spirits instead of grains. The malt provides a more earthy or savory flavor for the gin.

Because of the variety of gins available, it is one of the most versatile spirits available. Some of the most iconic cocktails include martinis, Tom Collins, Gimlets, and more all include this beloved spirit.
