Our Purpose

While some say “grain to glass,” for us, that’s never represented the full spectrum of what our farm is really capable of. Instead, we focus on a sustained cycle beginning and ending with purpose. We’ve built our farm distillery as a place for those who believe in building a better community, and in turn, it’s this community that supports our ability to do just that. This is the endless cycle of Eight Oaks, the infinite system of values that drives everything we do. We are not just farmers and distillers – we are members of this community.

OUR PURPOSE RENEWS THE LAND

We call ourselves a Farm Distillery because we are not one without the other. Yet we truly believe that we are bigger than both. We understand the impact we have, and work every day to ensure it’s something we can stand behind.

THE LAND NURTURES OUR FARM

Founded on the principle of leaving things better than we found them, our focus on regenerative, time-honored farming techniques not only allows us to grow the best grain, but ensures we can keep doing so for generations to come.

OUR FARM INSPIRES OUR SPIRITS

Our terroir-driven, award-winning spirits all begin as heritage grain – Rosen rye, non-GMO corn, Red Winter wheat, and Wintmalt barley – farmed right here, by us, in the Lehigh Valley, or as apples from a historic apple farm just down the road.

OUR SPIRIT GATHERS A COMMUNITY

We malt, mill, mash, distill, age, then bottle our spirits onsite, allowing us to support and grow our community. Plus, there is nothing like enjoying a glass of spirits grown from the same land that we gather on with friends, family, and those who will become both.

From Applejack to Pennsylvania Rye, Our Spirits Are Rooted in Tradition.

With a focus on planting carefully selected heritage grain varietals and sourcing heirloom apples from our neighbors, we are proud to be part of the revitilization of the storied spirits that helped found our country. We are reviving tradition in a way that nods to the past, yet is very much focused on the future.

Supporting charitable organizations aligned with our values.

A portion of every sale goes towards supporting causes near and dear to our hearts: the Second Harvest Food Bank of the Lehigh Valley, the PA Veteran Farming Network, and the Cancer Support Community of the Greater Lehigh Valley.

Inspired by our family’s shorthand representing the eight letters in I Love You (found anywhere from old love letters to the family group chat), we founded Eight Oaks on a longstanding tradition of love.
