Barrel-Aged Applejack

This apple brandy can be enjoyed on the rocks or in cocktails for a unique twist. Our favorite way to enjoy our Applejack in a cocktail is in citrus-forward cocktails, however, it drinks beautifully in almost any of your favorites.

Distiller's Notes

We carefully craft this historical, all-American spirit, with 100% freshly pressed apples. Zero additives, just like it was done traditionally. The varieties in the cider blend are chosen by our local apple cider supplier.  The cider is fermented with a temperature-tolerant yeast (although natural fermentation begins prior to us pitching) and sits for 7-10 days before double distilled through our 4 plate column and barreled at 60%ABV/120 Proof.

Our Barrel Aged Applejack begins its barrel aging journey in either a 25-gallon toasted barrel or a 53-gallon used Eight Oaks Rye Whiskey barrel. It sits for about 2 years before it is blended with other Applejack barrels of the same vintage and season before it is barrelled again in freshly cleared 53-gallon Eight Oaks Rye Whiskey barrels. The apple flavors are well preserved by careful distillation, with added spice from the Rye barrels encompassing 10-14 apple varieties.
