Distiller's Notes
Our American Gin is produced using Vapor Extraction of our botanicals as opposed to maceration, allowing more control over the potency of each botanical. Our super clean and neutral Vodka serves as the Gin base which is loaded in the still, and as it heats up and evaporates, the vapors travel through the helmet of the Pot Still housing the Gin basket of freshly mixed herbs and citrus peels.
The key botanical in all Gin is the juniper berry. To call Gin “Gin” you must include juniper berries into your botanical blend. We make our Gin taste unique and fresh by adding lemongrass, orange peel, and fresh rosemary to lighten the pine flavor the juniper presents and add more citrus notes. Coriander and Orris root round out the botanicals for a well-balanced flavor.
As the Eight Oaks farm matures, we will have more access to using Juniper berries, Rosemary, and Lemongrass grown right here on the farm.
TASTING NOTES:
Bright citrus and woody aroma with a fresh-picked rosemary and pine body. Slightly dry, bitter finish.
