Double Cask Pinot Bourbon
After our initial Bourbon Whiskey process of in-house milling, mashing, fermentation, careful distillation, and barrel aging we throw a wonderful twist on this traditional spirit by finishing in French Oak casks previously used to age Pinot Noir wine.
Distiller's Notes
Our Straight Bourbon Whiskey is blended and barreled in 59-gallon used Pinot Noir barrels from wineries of the Lehigh Valley. These finishing casks composed of French Oak as opposed to American Oak, soften the lingering heat of the 2-year-old whiskey while picking up rich flavors of berries and chocolate from the wine left in the barrel.
TASTING NOTES:
Jamy notes of blackberries, overripe strawberries, and cherries. Starts with robust corn and oak flavors, with hints of roasted nuts and a classic red wine dry finish.
MASH BILL:
— 78% Corn
— 9% Barley
— 8% Rye
— 5% Wheat
AGED
Minimum 2 years in New American Oak Char #3. Select barrels are blended and transferred into Pinot Noir barrels for an additional 3-6 months
